I'd use the 500s if they are going to expire soon and/or you do not have another flight you would use them for before their expiration date.

Personally, I find the F/C on the non PS 757s to be pretty lame... For such a short flight, i'd stick with economy plus.

But of course.... first class is first class, and coach is coach
