As I once found out, not all trains that go through Gatwick stop at Gatwick...

An option would be to get the first Southern train going from London Bridge to East Croydon (I think they all stop there) then pick up the first train to Gatwick (could be from Victoria, but equally might just be coming from London Bridge anyway)...
