Personally I think this is an interesting idea but I think the idea of a real fine dining restaurant in an airport is a strange one. It works for transfer passengers if they have six hours to kill but I wouldn't get to the airport early just to eat in a great restaurant.
It might work better if it's landside. I agree that if it can only cater to airside pax, the market may just be too limited for it to be successful.
