Why does it always have to be national/international brands ?

When the new airport at Austin, Texas opened a couple of years ago they went to a lot of effort to go for Austin, or at least Texan, concessionaires, which seemed such a good idea.

I want a cup of coffee to pass the time at a table before I depart. For this I do not need to be served by staff who seem incapable of understanding "A cup of your regular coffee please," or working only in stupidly-named sizes their marketing department have thought up. And for the price charged it would be nice to be served by someone who can speak the language of the country.

Harry Ramsden, long sold by its founder, has been through the hands of several overseas venture capitalists and has now fallen into the stereotype of "we cook all the food at 5 am and stick it under a warmer to be served by minimum wage staff" type catering. Come to think of it, just who BAA like working with.

I went through the new Hong Kong airport months after it opened. Hong Kong itself has to be the best shopping experience in the world. The airport was the exception, everything there could have been on sale in any continent.
