Both are very good....Pacific Place and Times Square. There's an MTR station for both malls. Since you're staying on the Kowloon side (I'm assuming TST area), take the subway towards the island. Switch trains and head towards Admirality, Wanchai, Causeway Bay, area.
To answer your last question, I'm not sure about that. Do hit Sogo!
Are you into electronics/mobile phones? If you're into mobile phones like I am, you are in for a treat! HKG has the biggest selection of mobile phones. If your local carrier uses GSM, even better. All phones are unlocked, so can use any SIM card. It's very good if you travel a lot.
