It's a generator - the only thing the APU does provide is electrical power.
Very small planes are 'plugged' to the airports power circuit and hence to do
not require an APU.
The engines carry generators as well, so as soon as they spin faster than idle level
they can provide the power.
So technically, it is true what they told you as they probably fired the engines
as late a possible.
