First: Roaches are not a sign of an unsanitary kitchen, they are attracted to water. Restaurants frequently wash down their floors and it takes time to dry and some areas of the floor do not dry quickly.

Second: Employees that use gloves scratch their hair, nose, ears and crack of their taile with their hands in gloves and then handle the food. They go to the restroom and come back and put on their gloves. They pick up stuff off the floor with their hands in their gloves. They take out the trash with their gloves on and then prepare the food with those same gloves. I do not like to be served by a person that is wearing gloves. Studies have proven that employees wearing gloves are 87% less sanitary than employees that wash.

Finally: "Could I have an order of worms with my roaches please?"
