The size of the meal is somewhat related to the time of the day (I think 4 courses only in the evening). But it is always quite nice, definitely better than intra-European business class.
In the evening you first get a drink (e.g. G&T or Champagne); they then bring you a tray with the starter, the dessert and the cheese. Starter is always something cold, but often very nice. They also serve you a wine or beer and some bread with the meal. You then have a choice for the main (hot) course; most of the time, one choice is fish and the other meat. Can be nice, but could also be better at times. Then you can eat the cheese and dessert that is already on your tray (Note that the order of cheese and dessert is different in English than in French or Dutch, the English seem to prefer their cheese before the dessert, whilst the continentals eat the cheese after dessert). Drinks service depends a bit on the crew; sometimes it seems like they want to make you drunk (they put a new bottle of wine on the table before your old one is finished) and sometimes you need to ask when you want another drink.
Breakfast is good, too - continental has a bit of everything (croissant, bread roll, jam, yoghurt, muesli bar, cheese/ham), or you can go for an omelette.
Seats in Leisure Select and BusinessPremier are great, too. Like old style long-haul business class, but without the recline. You can usually snatch a seat with a table, too.
Anyway, if you need to go from city centre to city centre the Eurostar is definitely the better choice than flying, IMHO.
