I was actually very surprised by this. I was ready to go out and recheck in but the colleague I was travelling with who is a frequent SYD-HKG-CAN, told me that they would collect the bag for you, so I'm guessing that this is something they just do. Also on my return I overnighted in HKG and when I was out at the baggage carousel waiting to collect my luggage there were several airport employees waiting with baggage tags to collect people bags for what I assume is the same process.
The extra stamp is a nice benefit that you do miss out on
