I took a quick look and I can fly direct to Houston with AC but would have to connect to Jackson on a non-Star carrier (e.g., Continental). Then back to Houston for my return flight to YUL. I would prefer to fly to Houston, Jackson, YUL or the opposite; Jackson, Houston, YUL. Any suggestions from the experts here would be appreciated.

The only way to get to JAN on a Star carrier is on US via CLT. If you want to maximize Star carriers you'll have to book an open jaw, with a seperate JAN-IAH ticket.
