I believe these are the standard Y configurations.

777 cabin width 231" 2+5+2=9 across
787 cabin width 226" 2+4+2=8 across (3+3+3=9 optional)

Here is an article that says most airlines are going for the higher density Y class cabin.

Dreamliner less dreamy than hoped

For airline passengers who were dreaming that they’d be getting roomier seats on Boeing’s new 787, the Dreamliner, dream on, reports Reuters. By a 2 to 1 margin, airlines are ordering the long-haul aircraft (expected to enter service in 2008) with nine seats across in economy, as opposed to the eight across configuration that has been touted by Boeing.

The result is an extra 21 seats on board, making them more economical for the airlines to operate. But passenger comfort is no such winner as it also results in seats the width of a standard 747 seat, 17 inches wide versus the 19 which an eight across configuration would have allowed.
Air Canada is going nine across for the 777 but I have not heard of a commitment for the 787. And even if they did make a choice, it's early enough to make changes based on experience with the new 767-300 interior.
