I think you have to make some clarification about coriander. This spice (I am pretending as a knowledgeable cook here... Paging

) is used widely in the SoutheastAsian cooking as well as South Asian, and Middleeast as well.
But then you mentioned about changing faces... Then I am thinking you might talk about different kind of spice...
I remember a friend who doesn't like coriander leaf... he said in certain Thai cooking gave him an unpleasant feeling.
Another point I try to make, is that, the Mosaic and KuDeTa are indeed a western restaurant style. So, I would assume, it's easier for you to make sure about the spices used in their cooking.
