I arrive on CX and depart on AC: is the Fairmont easily walkable from immigration, and is the AC check-in area easily walkable from the Fairmont?
Yes you're right. Fairmont YVR is a great option for a few hours sleep. It's easily walkable from immigration. (about 5-7 min indoor walk). When you reach the intl arrival hall, head up 1 level to the departure/check-in counters. Walk towards the US departure check-ins and you'll see a sign for Fairmont near the end of the check-in counters.

You'll pass by the US AC check-in counters on your way to the hotel.

Welcome to YVR.
