West Edmonton Maill (or WEM as it's often called) is crowded almost every day on weekends from about noon to early evening. It won't be as bad at the time you are travelling as it is likely that winter will not as yet have set in.

Galaxyland will be busier than the Waterpark.
Edmonton is a relatively easy place to drive around as long as you pay attention to where the bridges are to cross the North Saskatchewan River. Also it is cheaper not to stay at the Fantasyland Hotel in the Mall but anywhere around it but that is your call as the Hotel is definitely part of WEM.
In early October you might want to visit Fort Edmonton Park as a very interesting side trip. It is very close to WEM.
