Please note that I am new myself and do NOT know what procedures you'd follow to get your U fare changed to Z or if such a thing is even possible, nor have I ever booked a partner award. I know EF from trying for domestic awards on AA. This will tell you if there IS any Z inventory that exists. Weather YOU are able to get it given your particular situation I'll leave to someone who knows more than I.
But if you're even thinking about even semi-complicated award or upgrade attempts, having an EF subscription is a no-brainer.
