We did a (bus) tour to Alkmaar, Gouda and some windmills somewhere in between that were open for paid admission. Alkmaar is particularly worthwhile during the Friday cheese auctions (in season?) if you don't mind being a tourist.

Hmmm, we should consider a bus tour as well. Thanks for the suggestion. My only concern is that we could not stop wherever we wanted (for photo ops and the like). Alkmaar is also on my short list; so even tho it was touristy, you felt it was worthwhile?
How did you hear about/arrange for the bus tour - tourist office, hotel concierge?
