Orange seats can be selected by medallion members. They are generally the more preferred coach seats.

The number of orange seats varies hugely depending on the route, type of equipment, time of day, etc. I suppose it is a matter of how heavily the route is travelled by medallions. Even before any seats are selected, you can find 763s with only 7 seats in orange, while there are M80s with 70 seats in orange.
