I have flown DL coach only once. On my AF coach flights, a meal (lunch or dinner) usually includes :
- apéritif (usually some French Champagne)
- wine with my main course and cheese (usually not that great)
- cognac or Poire Williams
I usually drink more wine in Biz as the wines are nice crus classés and not standard Merlot, Syrah or whatever Vins de Pays.

I must salute you for enjoying a Poire Williams. Always a good choice!
More often than not, I don't take wine in coach. I would agree that the selection is much better in business/first.
However, even in coach on AF, the selection is still better then what you can get elsewhere.
Back to topic, this pay-per-drink wouldn't affect me too much. It's not something I need to get through a flight.
