All of the FS Marriott's I've stayed at have some form of room service throughout the night (granted my stays have mostly been in large cities). They may not have a complete menu, but limited items have always been available. I've eaten pretty late (or early, as the case may be

Some select service properties in large cities also have such service, supported by local all-night eateries.
