I donīt know if Emirates have recently changed the rules but the web-site let me do this for months until now.
Itīs even written somewhere that one of the advantages of booking through their website is that you can book different cabin classes.
Just an update:

I had no problems doing it from other cities in Europe (LHR etc.) However, I could not price out the first segment in Y ex MUC either
