If possible, I would suggest you reroute EWR or LGA to HKG via ORD. That way, you will get a 747 on the long haul, and would be able to grab a seat on the upper deck if available.
Are you upgrading to C? Depending on your status if you are upgrading JFK to NRT is easy to clear - usually confirmed on purchase. Otherwise, if you go through ORD specially on 881 - you may be waitlisted.
