The X-ray will not harm your food. There have been many studies done on this very matter.
CTX has way too many false positives to be useful to screen hand luggage. The result would be even more bags being opened, not fewer.
The solution is to make the "prohibited item" list very, very small and continue to use proven x-ray technology. A separate screen for explosives is still necessary to add much-needed explosives detection. An in-line test would be ideal, but doesn't exist yet to my knowledge.
