All very achievable but a heck of a lot of driving... remember that it's 90% likely you'll be in a stick shift car, not a manual, as it's what we all drive here. If you're not used to one, then get some practice in before you get here... we're not very forgiving of rental car drivers who stall their cars!!!
Try plotting your itinerary using one of the following sites

These will give you a good idea of your best route, journey times etc. Another thing to note is that all road distances are in kilometres, not miles & the speedometer on your rental car will be in Km (i.e. you'll be going much slower at 100km/h than 100mp/h!
Try to visit Kinsale and Clonakilty when you're in Cork - both gorgeous places, also I'd recommend a visit to Midleton on the easy side of Cork heading to Waterford where you can visit the Distillery -
