Are you fit and healthy? Has your doctor put restrictions on what you can and can't do? Pregnancy does not have to be that debilitating. While you cannot scuba dive pregnant, I did everything else on your list including kayaking and skiing. Unless there are complications, I'd be surprised if your doctor told you that you couldn't camp or hike. Discuss with your doctor. Mine was of the mindset that I could do most anything pregnant that I did not pregnant. The fetus is rather well protected. Historically, women have thrown themselves off horses and done lots of crazy things to try and induce miscarriages with no luck. There will, however, be activity companies that won't let you take part in their activities while pregnant for their own protection. Again, discuss this with your doctor, read and make the decisions that you feel most comfortable with.
And, FWIW, New Zealand is one of the places I would wait on. As beautiful as it is, there are also so many amazing adventures that you would be prohibited from doing pregnant that, given what you've said about yourself, I suspect it would leave you with much regret.
