Well, he probably can't travel 100% incognito, but if he just buys a Y ticket online, without entering any FFP-number or similar information that would identify him as THE Wolfgang Mayrhuber, probably nobody would notice until he is on the plane.

Once he is on the plane, without status, miserably stuck in 53E, what difference does it make? The poor seat pitch is still the same, no PTVs will magically appear, the food doesn't change either and the screaming kid in 54F won't be any quieter just because the big bad wolf is sitting within earshot.
All the crew could do at this time, is being friendlier and more attentive than usual and maybe come around with drinks more often, that's about it.
Of course, if the crew recognises him, they'll probably offer to reseat him, but accepting that would defeat the purpose.
