Great itinerary . I would love to do this too, after making a few reality checks:
- Are the travel times are realistic (some highways being 1 lane each way) for traffic and weather conditions? Or at least bearable in bad weather and holiday traffic (there could be lots in W. Co Clare, Ring or Kerry etc)

- re. B&Bs at Doolin, PM me as my Mrs could advise (at least of ones to avoid). There are many options, and it would be great if you caught the local musicians at the pub. Doolin can get extremely busy if there is a music festival.

- Aran Islands: Take a warm and waterproof jacket to Doolin! We were drenched on the day we were there! Check on whether you would need to book ferry tickets for that week, in case it is a very busy week.
We hired bikes there, but the horse & cart is offered to everyone!

- Cork: Kinsale (and the other beautiful place in Cork with the harbour and yacht racing) are great places to visit and get a nice meal. Great driving too!
