When are you travelling? I'm not a big fan of Nice either, but Cap Ferrat right up the road is very romantic... Do visit Monaco, but I don't think a dinner there is neccessary. I'd do Venice instead of Florence, but that's just me - I LOVE Venice, think it & Paris are the most romantic cities in the world & unless you are an art historian, Florence trails far behind...
