I just find myself wondering, if we were just fortunate to catch the end of the clearing up following the snow of the previous weekend, or whether this is a regular event on this route.

You'll likely get more responses on the CO forum, but my experience has generally been that the DUB/SNN routes are often overbooked. I am surprised that they didn't try routing you through CDG on the 10pm and then back up to Ireland on AF. That's what they did for me at this same time a year ago.
