As far as mail.app goes, there are some very nice filtering tools, and smart folders. Non of my mailing list mail hits the regular inbox, all goes directly to a smart folder for that list, or several lists.

Adobe is not going to realeas a UB for ps until the next release, but their lightroom beta 2 is very nice. Definitly not PS, but a great free photo app, been using it a while now.
