Amankila seems to be everyone's favorite on this board, so make sure you have a good amount of time there. (3 nights+)

At Amankila, we especially enjoyed the private dinner on the beach. The chef discusses what you would like to eat ahead of time and then it is cooked on the beach in front of you. I think this was only $100 which is a very good price considering how much food you get and the number of people waiting on you. They also have wonderful "breakfast in a bale" trips, with wonderful views!

For all of the properties, I would recommend that you email them each ahead of time and ask them to send you their most recent Word document of activities. There are so many unique experiences and they go into great detail about them in these documents. They also list the price so you can establish your budget ahead of time.
