I disagree. United would go with the scheduled duration of the flight. SNA-DEN is a 2:15 flight according to UA's timetables. It wouldn't make sense to base it on the flight times that vary day to day and variable to variable. Based on the official timetable, I would say snack plate of some sort even though it is only 846 miles.
Unfortunately, my info was pulled from multiple threads on FT about this issue and, indeed, actual flight time is part of the equation, along with time of day...
IIRC...for the vast majority of domestic flights, sans some specific ORD -> East Coast runs....

Lunch 11:00am-1:29pm
Dinner 4:00-6:30pm
All times are based on scheduled departure time.
I can say, from recent experience, my IAD-ORD flight in December fell dead into the breakfast timeframe, but, because the flight time was under 2 hrs (about 1:45), all we had was a Y snack bag and, of course, free beverages. A number of F class pax were upset or confused about this and the F/A's tried to explain the best they could. When they got to me, I just nodded and said I understood the procedure and that I would drink my breakfast
