Price changes in hours?

Hi all. I've been lurking for a few weeks, and am totally intrigued by the mile chasers and the other useful information about the changes in RR etc. I fly from TPA to BWI pretty regularly, so I'm always on the lookout for DING fares and am happy just to get the $49 each way fare.

This morning I was looking to book for Memorial Day Weekend, and the flight I wanted was $158 (really great, I thought.). A few hours later I returned to book it, and now the best I could get for a flight that was once $69 is $125.

How'd it change so quickly? Can't be that a dozen, or even 5 people came and booked that random Wednesday night fare closed? Or would the website see that I'm looking - and there is now interest in that flight - and change it? (Or am I paranoid?)

Generally speaking, any advice on a specific time of day/day of week that's best to book? I know I should have just booked it the second I saw it for $158 RT.
