I'm fascinated by the Oyster card, I don't remember that option before. It sounds like the £3 deposit is refundable only by mail, which probably discourages people. But the pay-as-you-go, at reduced fares, capped at the cost of a 1-day Travelcard, seems like the best of all worlds and makes the Oyster card a no-brainer. Am I right in that? Is it practical to use the ticket machines to put in a 1-day Travelcard every day? I wouldn't want to make a significant deposit on the card and then not use it.

If you scroll down this page, it gives the capping amounts. You can still buy paper tickets (double the cost of Oyster rates in zone 1) or a one day travelcard (£4.90 for zone 1-2 after 093), however the Oystercard capped rates will always be cheaper, so it starts deducting the single fare rates, then stops when you reach the cap - generally 50p less than the travelcard rate.
