The main reason is that I prefer to have a seasoned staff, not a hotel full of staff just learning how to work in the hospitality industry.

Amen! We stayed at Le Meridien (relatively new) and at least half of the staff was pleasant, but clueless. Almost every (simple) request in the hotel or restaurant took 2 or 3 tries to get right. Many of the staff had been recently promoted to their new jobs from lower postiions elsewhere (eg Concierge had been bellboy at Raffles for 8 years prior to coming to Meridien). I appreciate their staffing problem, but OJT is not exactly what I'm looking for in a vacation spot.
