CHAMPAGNE
Piper Heidsieck Cuvée Rare
Piper’s deluxe cuvée, one-third Pinot Noir and two-thirds Chardonnay, is explosively fresh on the nose with a creamy, toasted brioche flavour – simply delicious.

WHITE WINES
Pouilly-Fuissé Vieilles Vignes 2003, Collovray-Terrier
The searing heat of the 2003 summer and old vine concentration combine to make this an uncharacteristically big wine but its firm core of acidity gives it a clean, refreshing flavour.

Three Choirs Estate Reserve Bacchus 2004
Bacchus is an intensely aromatic grape variety admirably suited to England’s
cool climate – in this case Gloucestershire. There’s lots of crisp orchard fruit
aromas and flavours and good depth and length.

Tamar Ridge Reserve Chardonnay 2002
This is a lovely wine from the Tamar Valley in northern Tasmania – refreshingly clean citrus flavours blended seamlessly with a kiss of toasty oak.

An absolutely benchmark Hunter Semillon, rich and creamy but with great
citrus freshness.

RED WINES
Château Lynch Moussas 1996, Grand Cru Classé Pauillac
A super wine from a great vintage now just approaching its peak of maturity –
rich in color with complex aromas of blackcurrant and toasty oak.

Beaune 1er Cru Teurons 2002, Domaine Rossignol-Trapet
2002 was a stunning vintage in Burgundy and, although young, this wine
is drinking beautifully. Fleshy and rounded, it has a lovely fresh flavour
of soft red fruit and cherry.

Penley Estate Coonawarra Cabernet Sauvignon Reserve 2000
This is the flagship wine of the estate and it gets all the treatment – the best
estate-grown fruit, the finest barrels and the most experienced winemakers.
The result is simply delicious!

Glaetzer Bishop Shiraz 2001, Barossa Valley
Is anywhere better for growing Shiraz than the Barossa Valley? This is full
bodied and multi-layered with a velvety finish.

DESSERT WINES
Opitz Goldackerl Trockenbeerenauslese 2002, Austria
Austria makes some of the finest sweet wines in the world. The effervescent
Willi Opitz, from his tiny vineyards in Illmitz near the Hungarian border,
produces some of the very best in the country.

Warre’s 1988 Colheita Port
Complex, sweet, nutty flavours offer an admirable after-dinner glass.
