Simple answer is that in order to view a booking, there must be a reservation! If the remaining segments are open dated without having booked any flights, then there will not be an itinerary to display unless there is a confirmed flight on at least one of the remaining segments.

Just don't lose your tickets (presumably they are paper?) so that when making reservations, you can quote the ticket number during the booking process.
