Since I rarely get lounge access, I spend my layover time roving the airport looking for the cheapest (no, scratch that, the best value for money) beer I can find. That's my spot till it's time to head for the gate.
If the bar has a view of the tarmac or even the runways, that's a major plus.
However, since you're asking for specific examples, there are two that come to mind, both of them in Singapore:
Changi Airport has both a pool and a rooftop garden which make for a novel way to kill some time. They've also got good city tours, but you need a layover of 6 hours plus for that, I think.
