As to turbulence, not much difference. Lightly-fueled 757s sometimes move around more than one might expect because of low wing loading. On the other hand, some people who sit in the rear of a 732 find the occasional abrupt yaw movement disconcerting. I've been on mirror-smooth flights on both and ten-on-a-scale-of-ten roller coaster rides on both.
