TAP's Business Class is pretty good (certainly better than LH for example) and on a flight the length of ZRH-LIS (over 2 hours) you'll get a meal. You should be able to order veggie though I have no personal experience of doing this. All they have to do is insert a comment in the booking so I would simply call TAP and say you want a vegetarian meal.
You can definitely pre-allocate seats in Business Class. Again, over the phone is the best way. Seating is 2-3 on the Airbus 319/320/321. If you scroll down this link you will see what people got on FRA-LIS in Business - pretty substantial. Note that service can be quite formal and "old fashioned" but this does mean that you get rather generously looked after in the drinks department...
