Well, after a few months of leeching info, I can finally contribute some ... So here's a menu for a flight that no FT'er ever seem to take ...

Auckland >> Singapore

supper menu

A Savoury Note
Mesclun with smoked seafood, asparagus and tomato

The Main Event
Baked salmon trout with pestro crust, sauteed shimeji mushrooms, artichoke barigoule and roasted fingerling potatoes (Special created by ???)

Stir fried chicken with macadamia nuts, selected veggies and fragrant rice

Seared tournedos of beef with Madeira jus, roasted veggies and potatoes

Comment: I don't quite remember what I had for the supper; I think I had the chicken and it was quite allright. For breakfast I had the frittata and I remembered someone saying that egg dishes on planes are generally quite hard to pull off--if this were true, then I have to say the frittata was not bad at all!
