Is it a good time of the year to book this trip for July? Are better offers coming out later in the year?

For the travel period you're looking to book, $999 per person with hotel and airfare is a pretty good deal. That roughly breaks down to $142/night.

The only downfall to the Hawaii Prince is that it has no beach--you must walk over to the HHV to get to Waikiki Beach (or the other way to Ala Moana Beach Park, if you so desire). Otherwise, it's a good hotel with stunning views of the ocean--though financial unstable (insider info). If your parents don't mind having the beach in a reasonable walking distance (one of the reasons why the Prince is pretty cheap), then I'd suggest booking it.
