Full dinner service is only available on transcontinental flights. On your flight, I would expect either of the following...

1) soup/sandwich combo plate with russell stover dessert candy
2) entree choice (meat plate or pasta) with appetizer salad, cheesecake dessert

On mid-continental flights (IAH--->west coast), dinner is usually one of the above options with cookies and milk served about 1 hr before landing.
