Your are right. The veggie choice from the normal meal is ALWAYS better than the special VGML or VLML, which can be disgusting, depending on starting point (and often has all the yummy deserts and starters missing).
If you CAN eat something else (fish, white meat), I would NOT order the meal and hope you get the veggie choice, but if not make do with something else. AFAIK there is always a veggie option.
Otherwise I would put in the request. If you ask nicely, I am sure they will give you the standard veggie option if there are some left over.
