Have not had exactly the same situation but when I come across different rates for different dates, I will just make seperate bookings and then inform at check-in that I have additional bookings, so that I do not have to check-out and re-check-in. No problems so far. Sometimes they will link the different bookings up quite quickly but not always. I have a feeling it depends on the person's ability to use the system rather than the system itself.
In the even that LVH forbids you from doing this, the worst case is for you to make seperate bookings and then check-out and check-in again. I am sure even this won't take too much time, assuming you want to stay in the same room
