I was in EZE for about the same time and did a quick weekend trip up to Iguazu falls with no problem. We went directly to Iguazu (transfered from EZE to AEP) and spent 2 nights there. I think that is all that you would need on a hurried trip. We loved both Iguazu and Buenos Aires.
