Almost certainly, you do not have enough time.

From Cork to Gatwick, you are probably flying either easyJet or Ryanair. Neither airline will transfer your baggage automatically at Gatwick so you will have to collect your baggage and check in again. Even assuming that your flight arrives on time and that it only takes you half an hour to collect your baggage, exit into the arrivals area and then walk over to the check-in area (which also requires everything to go right), you will almost certainly still be too late to check in for your Orlando flight - whichever airline you're on and to whichever Orlando airport you're flying.

You really want to leave about 4 hours between flights if you're going to do this.
