I think that warning about how your card hasn't been charged is simple boilerplate anytime you make a non-prepaid hotel reservation online. I don't think it would put the hotel on any more sound legal footing to try to jack up the rate once you arrive.
If they don't notify you until
check out, it seems to me you would have an open and shut case to charge it on your credit card and then dispute it. Just save your emails showing the reservation at the lower rate.
Now, if you get there and they won't let you check
in without agreeing to a higher rate....well, I hope the beach is a comfortable place to sleep for a week

Actually, I suspect this would be the more likely scenario. Most hotels nowadays require you to sign-off or initial the rate when you check in, presumably to avoid disputes later.
