Jenbel, you're right in that a Wiki is more editable than Forum posts (and you can edit other people's work) but that being said I've seen Wikis spring up all over the Web that are a complete mess - simply because no one has taken the time to come up with some semblance of a structure and a co-ordinated style. When they're a mess like this, they discourage first-time users, who are one of the groups of people that a Wiki is primarily aimed at.
Arguably the best Wiki on the Web is the site that made the word "Wiki" a household name (well, almost) -
Wikipedia, and over there they've got some serious geekiness about precisely how the Wikipedia should be structuread at
the Wikimedia Meta-Wiki.
