You can go to the same "once-per-month" restaurant for each FFP you are registered for. I have 4 cards, each registered to a separate FFP dining program. This way, at a "once-per-month" location, I can use my separate cards for the UA, US, DL and NW programs - 4 times total during the month!

Or if you want to consolidate all miles into 1 FFP, you could do as bob12403 suggested - buy a gift card on your 1st visit! You would earn miles on that 1st "once-per-month" visit, and use the balance during the remainder of the month.
