As UnitedSkies mentioned, there isn't currently a Z fare filed for the route SFO-SYD. While this might seem strange given your search with the availability tool, this happens often on markets like the US-Oz flights where UA actually sells a ton of paid biz seats.
I don't fly to asia much, so I can't speak to whether UA ever publishes a Z fare to SYD....I would think they would during very limited windows - say, to match a sale from Qantas or whomever.
